Soda Bread

Ingredients: makes 8 chunks

400g plain flour, plus extra for dusting
1 teaspoon bicarbonate of soda
2 teaspoons cream of tartar
1 teaspoon salt
1 teaspoon caster sugar
25g butter, melted
300ml milk, at room temperature
Grated cheddar and pumpkin seeds to sprinkle

  1. Preheat the oven to 190°C/Gas 5 and melt the butter.
  2. Sieve dry ingredients into large bowl and make a well in the centre.
  3. Measure out the milk and add to the dry ingredients along with the melted butter.  Mix to a soft dough.
  4. Dust the worksurface with flour and tip out the dough.  Divide the dough into eight lumps and shape into rough rounds approximately 3 cms tall.
  5. Put the dough rounds onto a baking tray, scatter the cheese and pumpkin seeds on the top. 5.
  6. Bake for 30 minutes until golden brown and the cheese is bubbling on the top.
  7. Cool on a wire rack and eat while warm.
