Warm chicken salad with matcha pesto dressing

Whoa this is healthy, you can cheat and buy ready cooked chicken and have it warm or cold or you can griddle a chicken breast.  The dressing is delicious with either fresh pesto or a jar of pesto and the extra healthy bit is the matcha green tea powder, I like Tea Pigs.

Ingredients: serves 2
A little olive oil
2 chicken breasts, sliced
bag of salad leaves
handful of cherry tomatoes, halved

for the dressing:
2 tsp green pesto
1 tbsp extra virgin olive oil
twist of sea salt and black pepper
1/4 tsp matcha green tea powder

pine nuts to sprinkle

  1. Heat a griddle or frying pan until hot, sprinkle over a little olive oil and use a pastry brush to cover the surface, griddle the chicken until cooked.
  2. Spread the salad leaves between two plates or bowls, scatter over the tomatoes and chicken pieces.
  3. Make the dressing by whisking all the ingredients together, pour oven the salad, sprinkle with pine nuts and enjoy
