Baking means 'to cook with dry heat, in an oven' an applies to a wide variety of foods. You'll learn different techniques depending on the workshop, for example:



  • Cakes and sponges, - creaming and whisked sponge techniques.  You'll make:


    • Mini Victoria sponges with vanilla bean buttercream and raspberry jam

    • My signature chocolate, blackcurrant and beetroot/courgette cupcakes with blackcurrant fondant icing

    • Sweet potato and orange loaves

    • Mini coffee and walnut cakes


  • French patisserie - various techniques, you'll  make:


    • Eclairs

    • Raspberry friands

    • Madeleines

    • Rruit tartlets with creme patissier


  • Pastry - shortcrust, choux, filo and puff, you'll make:


    • Cherry bakewell tarts

    • Profiteroles

    • Apple strudel

    • Raspberry millefeuille


  • Afternoon Tea Treats - creaming, rubbing in, piping you'll make:


    • Custard Creams

    • English Madeleines

    • Party Rings

    • Scones
